The Ultimate Chicken Fajita Recipe

I started making these in the beginning of quarantine, and let me just say….am I a professional chef? No. But I am most definitely a fajita connoisseur. With that being said, do not doubt this recipe. It is 99.9% guaranteed that you will be coming back to this recipe once you try it. These stats are also scientifically proven, so feel free to just thank me later.

Before I get into it I want to say that these measurements are completely based on my personal preference. Please change the spices/toppings as you wish!

The Ultimate Chicken Fajita Recipe:

Cooking time: 30 minutes
Level: Easy
Taste: Immaculate

Ingredients:

  • 1 yellow onion
  • 3-4 bell peppers (my favorite are red, orange, and yellow, but any color works)
  • 3 chicken breasts, cubed
  • 3 Tbsp extra virgin olive oil
  • 3/4 of a lemon
  • Spices:
    • kosher salt
    • freshly ground black pepper
    • smoked paprika (Yes, smoked. It makes a huge difference. Regular works fine too!)
    • paprika (in addition to the smoked paprika)
    • cajun seasoning
    • cumin
    • red pepper flakes (optional)
  • Tortillas of your choice! I use the ‘Mission’ brand whole wheat carb balance tortillas, but any brand/type works perfectly fine!
  • Toppings:
    • shredded lettuce
    • shredded jack cheese
    • guacamole
    • salsa/ pico de gallo
    • sour cream (I don’t usually use it, but it is definitely an incredible addition)
    • cilantro

Directions:

  1. Chop the onion and bell peppers into strips, as shown below

2. Drizzle about half of a tablespoon of olive oil into a pan and turn the stove on medium heat. Add in your veggies and season with salt, pepper, smoked and regular paprika, and cajun seasoning. Stir occasionally and turn the heat on low after about 10 minutes.

3. While the veggies are sautéing, prepare your chicken. Add the cubed chicken into a medium sized bowl and squeeze 1/2 of a lemon into the bowl. Then add your spices accordingly: salt, pepper, paprika, cajun, cumin, red pepper flakes. Be generous with your spices! Don’t be shy with the salt either (about 3-4 tablespoons, give or take). Massage the chicken so that everything is evenly coated and let it sit in the marinade for about 10 minutes. You can even prepare the chicken the night before and leave it in the fridge. The longer the chicken sits in the marinade, the more vibrant the flavor.

4. Turn your stove on medium heat and drizzle 1-2 tablespoons of olive oil onto a pan. Let the oil get hot before adding the chicken. You want to hear sizzling when you pour the chicken onto the stove. This is a fajita after all!

After allowing the oil to get hot on your pan (4-5 minutes), add the chicken and stir occasionally. Squeeze the last 1/4 of the lemon, and sprinkle a little bit more of all of the spices. We want lots of flavor here.

You may even need to add more salt at the end.

5. Let the chicken cook until the center is no longer pink (about 6-8 minutes). Don’t overcook though because you want the chicken to be tender and juuuuuicy. If you need to add more lemon, by all means go for it. Turn off the stove and start preparing the toppings and the tortillas.

6. Turn your stove on low and individually warm up each tortilla. As you are waiting for the tortillas to heat up, shred your lettuce and prepare the other toppings (ex. guacamole, sour cream, cheese, salsa, cilantro). Assemble the toppings in a row next to the veggies and chicken.

7. Once the tortillas are warmed up, place them on a plate and self-serve! The chicken and veggies can stay hot on the pan. Just add whatever toppings you would like to your fajita! I kept mine simple this time with lettuce, salsa, and cilantro, but I love adding cheese and/or guac when I have it handy.
